Coconut Oil Recipes for better health

Every time we sit down to pen something about Coconuts, we’re surprisingly baffled at the neverending goodness they yield. Which is why today we’ll be exploring the healthy, energizing and flavoursome alternative that Coconut Oil is, to our other fatty oils and butters.

It is no secret how versatile and miraculously nourishing coconut oil is, and it is quite rightly called the elixir of life. Making it a regular part of our dietary routine can help revive gut health and improve immunity while supercharging metabolism like nothing else can. Rich in antioxidants, it is a natural, vegan and gluten-free option for health junkies, with exceptional flavour at that. And while we can go on and on about how incredible it is, here are some quick (mostly), fun and scrumptious coconut oil recipes for an instant energy boost. Coco Chai

Who doesn’t love a cuppa chai first thing in the morning? It is our forever love, no matter what part of the country we’re in. But have you ever relished a hot piping pour infused with pure coconutty goodness? Well, here’s your chance.

Ingredients (1 Serve)

  1. ¾ cup Water
  2. 1 ½ tsp loose Black Tea Leaves
  3. 1 inch long slice of Fresh Ginger
  4. ½ tsp ground Peppercorns
  5. 1 inch long Cinnamon Stick
  6. ¼ tsp Turmeric Powder
  7. 2 tbsp Honey
  8. 1 cup Coconut Milk
  9. 1 tbsp TCP’s Organic Virgin Coconut Oil

Preparation

  1. Boil the water in a saucepan
  2. Add the tea leaves and spices into it
  3. Let it boil for 5-10 min over medium flame
  4. Add coconut milk in the end (use high-fat to avoid curdling) and boil for another 2-3 min
  5. Strain and carefully transfer the contents into a cup
  6. Add 1 tbsp coconut oil into it and stir well
  7. Serve and enjoy your piping hot cuppa tea!


Coco Buddha Bowl

Wouldn’t it be great if you get to gorge on a fulfilling, nutritious and deliciously healthy meal everyday of the week? Especially when it is super-easy to make, most of it tossed together with leftover food from last night? Well, here’s the desi version of a Buddha Bowl: get ready to curl your toes and go to food heaven. Just try out this easy buddha bowl recipe, and you'll see what we mean.

Ingredients (1 Serve)

  1. 4 tbsp TCP’s Organic Virgin Coconut Oil
  2. 2 sliced Onions
  3. 1 tbsp minced Garlic
  4. 1 tsp grated Ginger
  5. 1 chopped Carrot
  6. 1 chopped Capsicum
  7. 1 tsp Garam Masala
  8. 1 tsp Turmeric
  9. 1 tsp Cumin Seeds
  10. 1 tsp Coriander Powder
  11. 1 tsp Paprika Powder
  12. Salt to Taste
  13. 2 cups Water
  14. 1 cup boiled Chickpeas
  15. 1 cup Spinach Leaves
  16. 1 cup cooked Rice
  17. ½ cup roasted Cashews
  18. Fresh Coriander Leaves

You can also add a dressing / sauce and nuts of your choice for added flavour and garnish.

Preparation

  1. Heat 3 tbsp oil in a pan.
  2. Add the onions, ½ tbsp garlic and ginger. Saute for 5 min.
  3. Add the carrots and capsicum. Saute for a few more min.
  4. Add the spices, season with salt, and continue sauteing.
  5. Pour in the water, and continue simmering until the mix is cooked well.
  6. Blend the mix using a hand blender or cool and blend in a mixer.
  7. Pour the blend back in the pan, and add the chickpeas.
  8. Cook for another 20 min. Set the mix aside to assemble the bowl.
  9. Heat another 1 tbsp oil in a separate pan.
  10. Add ½ tbsp garlic, salt and the spinach leaves. Saute and cook for 10 min.
  11. Spoon the cooked rice in a coconut bowl.
  12. Add the spinach and masala chickpeas on top.
  13. Garnish and serve with the cashews and coriander leaves.

You can also add mushrooms, paneer / tofu, or crunch it up with veggies of your choice. Another option is to switch the rice with pasta or noodles to create an indo-continental fusion!


Coco Smoothie

Can’t get enough of those totally gorgeous and colourful smoothie bowls you see online? While they sure seem fancy, they’re actually quite easy to make. Read on to make your own insta-worthy breakfast bowl!

Ingredients (1 Serve)

  1. 3 Ice Cubes
  2. 1 frozen Banana
  3. 1 tsp Cocoa Powder
  4. 2 tsp roasted Flaxseeds
  5. 5 Oreo / Chocolate Cookies
  6. ¾ cup Coconut Milk
  7. 1 tbsp TCP’s Organic Virgin Coconut Oil
  8. 1 cup whipped Coconut Ice Cream

Preparation

  1. Blend all ingredients in a blender until thick, smooth and lump-free.
  2. Serve with fruity and nutty toppings of your choice in a Coconut Bowl.
